Made this yesterday, it was very good.


1/2 cup apple juice
1/2 cup chicken broth
1 T brown sugar
1 1/2 t cornstarch
1/2 t salt
1/8 t black pepper

1lb tenderloin cut into medallions
1T flour
4 t olive oil divided
1/2 cup chopped onion
1 cup sliced apples
3/4 cup fresh cranberries

Combine first 6 ingredients in bowl.

Flatten pork to 3/4, coat with flour. Heat 3 t oil , saute until brown. Remove from pan. Add 1t oil to pan. Add onion, cook until golden brown. Return pork to pan, add juice mixture, apples and cranberries. Bring to a simmer, cover and cook for 3min, or until cranberries pop, and pork is cooked, stirring occasionally.

The pork is supposed to cook through with just a quick sear plus 3 mins of simmering? That doesn't sound like enough.

I didn`t think so either.....but giving it a good brown on both sides, then the simmer.....they were perfect
