I know there are pickled pitted olives in the supermarket, but they occasionally contain pits, so not safe to put in a food processor to shred the olives. So how to get or make shredded olives (like little rings)?


(also, are there raw olives on the market? It seems all are pickled)

Unless you need absolutely perfectly round rings I always find it easy to take pitted olives from the olive bar and give them a little squeeze to make sure they are pitted before putting them in the processor to make tapenade.


I've occasionally seen uncured olives in the market but you'd need to cure them somehow, they're generally considered inedible without being cured.

It's for things like foccasia bread. No need of perfect rings. Yes the canned rings could do the work. Thank you both.

In the food processor, you will get chopped bits of olives. That may be fine for your recipe. If you want rings, you have to do the canned kind or slice them yourself.

I buy dry packed olives, either sliced or whole.

using canned olives - I suspect you'll be disappointed with the results.

Get them at the salad bar and do a little work to cut the rings. Which do not need to be perfect.
