What kind of food coloring do bakers use to get the most vivid colors in cakes? Is it gel food coloring that you can buy at places like Wal Mart or do they use something else?
Paste or powder will give you deeper colors. You'll want to be slightly lighter than you want your final color to be as it will deepen. If you get powder, make sure you get the correct kind. Some is fat soluble, some is water soluble.
Are you talking about the actual cake or the fondant/frosting? For fondant, you'll want paste and you'll need to wear gloves or you'll have colored hands since you have to knead it in and then smooth it onto the cake.
