    2. Add the vanilla extract and egg to the melted butter and sugar, then stir to combine.
    3. In a separate bowl, stir together the flour, cocoa powder, baking powder, and salt until well combined.
    4. Pour the bowl of dry ingredients into the bowl of wet ingredients and stir just until a smooth, chocolatey batter has formed. Pour the batter into two 8oz. ramekins.
    5. Bake the brownies in the preheated 350 degree oven for 25-30 minutes, or until the center of each brownie has risen up into a dome and the surface looks glossy and cracked. Let the brownies cool slightly before eating.


The few extra minutes are worth the Vast difference in quality for myself. No leftover's, minimal dirty dishes, just hits the sweet-spot (no pun intended) for me.

Tried to make a mug cake from a cake mix (follower the recipe to a T). It supposed to be OK to use a boxed cake mix, plus water and an apple sauce. I used Duncan chocolate cake mix.
When I checked on the consistency after 1 min - the batter was still "moving" in the mug. So I nuked it for another 30 sec. The toothpick was still very wet. So I added another 20 sec for a good measure. (My microwave is 1200W)
The end product was hard, very dense and chewy.

Googled the problem and at the next attempt, I added an additional spoon of apple sauce. Didn't see much difference. Checked other recipes, but all had the same mix to water to apple sauce ratio.
What I am doing wrong?

Next time I will try a mix of cake mix with angel cake, as recommended by nuts2uiam and on other websites...


Brian_M: your recipe is for a bigger serving, not a mug cake, right?

not that it makes me cool (not much hope there) but i first heard about mug cakes years ago.

theyre obviously catching on more, and people are starting to package mixes for the purpose, but theyve definitely been around for a while.

Oh, yeah. I heard of them long ago too. Fads come and go...
Actually wondered what's the difference between mug cake and cupcake. Like mug and cup aren't pretty much one and the same? ...

I bought some mug cakes, when they were on sale. First of all, they were not very good, and then I thought I was going to have to toss the mugs. I have never had such a hard time, trying to clean a dish or cup. I soaked them for two days. LOL

Hmmm, I think the fact that you can charge nearly $3 for a pkg of mix for a single mug cake might have something to do with their popularity, at least on the business side of things.

The difference between mug cakes and cupcakes: mug cake is mixed in mug and microbaked.

I just checked the Fudge Brownie Pot recipe above- almost 500 calories per mug, 73 grams of carbs, 51 grams of sugars, about 50% of calories from fat. And that's without frosting. What cake is good without frosting?

I gave it three tries. The results were not satisfactory. Now totally abandoning that idea. I am not a sweets person anyway.

Elnina, I keep the above recipe in a tupperware and whenever, I get a hankering for something like cake, which is not that often, I will go to that. I agree, it is not the ultimate, but, it works for me when I am looking and I don't have to keep a whole cake that DH will never eat.
