I've had fresh brains, but it's been a long time. I just ordered a can of Rose Pork Brains in Milk Gravy. However, the recipes that I've found only treat brains and scrambled eggs. That's fine, but there must be more recipes. There's a current thread about Shakshuka. I like the idea of runny yolks, tomatoes, peppers, and possibly potatoes (probably fried) with the brains. I'm open to any recipe ideas.

The first link is to a brains and scrambled egg recipe. My only serious problem with it is that it calls for milk instead of water. The second link is to the Shatshuka recipe.

I never saw canned brains. How are they processed?

Fresh brains (sweet bread?) with scrambled eggs is probably the most popular recipe. I don't use milk...
Veal brains are most delicate...

BTW: lots of cholesterol there, so be careful how much and how often you eat it.

I have few recipes, but they are with fresh, not canned brain.

After cleaning ...

- it could be sliced and breaded like a cutlet (egg, flour and bread crumbs), then pan-fried.

- it could be prepared like chicken Marsala

- make brain quiche

- make pot pie with brain and bechamel sauce.

- chopped and pan-fried with small chunks of bacon and sauteed onions. Served in avocado.

- cook with scrambled eggs and serve like taco or burrito

- make croquettes with brain

Let me know if anything sounds interesting and I will post recipe.

Seriously, I just don't know. It's hard to predict the outcome from processed food, but probably easier to make decision what's to do with it after opening the can, so you can see and taste it, then determine what's next.
Since the brain is cooked already - it doesn't makes much sense to cook it again, so maybe just reheat or fry sliced and breaded ?

The only recipe I found online was the ol' boring one with scrambled eggs
