I’ve never made one of these, but I’d like to do one tomorrow for breakfast. I have a simple Joy of Cooking recipe and an iron skillet. But I want to use whole wheat pastry flour. What could go wrong? Or will it matter at all since the DB has no baking powder or soda in it?

What do you think?

Never made this either but it looks easy to make. I would say try it with the wheat flour and see how it turns out. You learn by trial and error.

What time is breakfast? I have a two hour trip to the airport, but I just might make it in time.

Breakfast is usually at 7:30.

My recipe does not call for filling. It says to serve with powdered sugar. We might sub syrup for powdered sugar. And I have some nice tangerines.

I served this with fresh pineapple because that is what I had in the house. I think cooked apples would be my preferred filling though.

It turned out beautiful. DH and I ate the whole thing. But for me, it had an oddly flat taste. Perhaps I was missing baking powder, or perhaps I undersalted. I don’t know. The pineapple was good too.

It would also be good with lightly sugared strawberries.

Squeeze some lemon juice over it. That should brighten it up.
