I made rotini recently with onions, garlic, pancetta, chopped olives and sun-dried tomatoes. I was pleasantly surprised, quick, simple, really a clean out the fridge make it up as I went along dish and it was very tasty

Rissotto with crimini and/or porcini, peas, and sliced Italian sausage is another easy, satisfying possibility.

Lasagne has been made easier by using the Barilla no-bake noodles. They are so good.

I also say a lasagna, that way you will be able to make it and not stress about screwing it up just pop it in the oven and dont forget!!! Just make a good garlic loaf and your salad! You sound like you already won them over but Good luck!!
