What kind do you make, Nomad? I used to make dill, bread and butter, and 9 day pickles. Separately, of course!

We have done the 9 days and dills. I always grew dill so it would be fresh. I can't remember doing bread and butter but I do like them. My favorite home caned pickle is pickled beets. Those I could eat every day. Well pickled cauliflower too.

Oooo...I like pickled beets and cauliflower, too. My MIL used to buy those mixed pickles at the store and everybody'd get mad at me because I'd steal the cauliflower from them - that's all I'd eat.

B&B pickles are so easy to make, but I got so I liked eating the 9 days better - crispier, I found. My mother still makes these faux watermelon rind pickles out of ripe cukes. She's been making them for at least 40 years now. It's got so I can barely look at them, I've eaten so many over the years.

Oh you don't know what you are missing by not canning meats! It is so nice to come home from a school function and have beef and noodles on the table in about 15-20 minutes. Scallop potatoes with bits of canned ham (not Spam )or hamburger 'helper' in 15 minutes with no chemicals. Ummmmm love it. I started doing it so I didn't have to worry about losing our meat when our power goes out. It use to happen every winter we lost 2 freezer loads before I said I am canning up meats. Of course I still freeze some too but I love having it shelf ready.

Nomad we are down to about a total of 6 gallons of pickles I know that won't get us through. Soooooooooooooooooo told the kids just last night don't be asking me to buy them at the store when you are eaten all of ours up. My 2 can devour a quart of pickles in one day.

My mother makes those crazy pickles to. Dyes them red no less.

Mine does too.....kinda. She puts Maraschino (sp) cherries w/juice in them. One year, she decided that, in anticipation of Christmas, she'd make a small batch w/green cherries. Didn't go over too well.

Red! Aw I do all of ours natural. Dill, (whole, slices, halves and spears) then bread & butter. One likes dill the other B&B but I use more dill so can more of them. I do a case each just for each of them besides what I put up for my cooking or eating. Guess I am lucky they could be downing a bag of chips every night huh?

Her red ones are the ones made from over ripe cucumbers with the seeds removed. Not bad but I usually pass and have bread and butter styles.

Jaxson, when you can meat, do you pack the jars or let it have lots of room around it? I packed some venison lightly and ended up with about a pint of meat in a qt jar.. And I have more venison to cann tomorrow. Please give me your opinion.
