I have had good luck with a thick cut London broil sliced very thin. Recently I walked into my grocery store and there was a beautiful piece marked PRIME and it was on managers special at 50% off -- made the most delicious beef strogonaff. I do not have good luck with flank steak -- too chewy these days. I have also tried flat iron steak and that was good -- much more tender. It's expensive but they sell it vacuum packaged at my store and it is the perfect amount of meat -- I also use it for fajitas.
