Love taco salad, these are great ideas. I add blsck beans and corn on mine. It doesn't have to be unhealthy if you make some swaps with healthier options.

Sorry, but....if you take out all the things that make it a taco salad, all you have is a salad. I don’t think one a month, or so, is going to hurt anyone.
I chop up romaine lettuce, add red kidney beans, black olives, green olives, crushed tortilla chips (plain kind not Doritos) Shredded cheddar jack cheese, Guacamole on the side because I don't like it and my husband does. I make homemade ranch dressing to go on top and I mix it all together. We don't use salsa or chopped tomatoes because my husband can't have them.
I season the ground beef with taco seasoning and cook. I prefer small crumbles of meat not pureed.
My mom thought of this in '71, lol. We had just enjoyed the newly-invented taco salad at a dept. store called the "Broadway" in SoCal that had a cafe inside. She said we can make that at home!
Did it have Catalina salad dressing? This might be a version of it. (I remember The Broadway!)
I'm still waiting for the story about the meat in the blender. Please share Sand&Salt. Lol
