I'm looking for a slightly different variation on a peach crisp. I'd like it to be "richer", and use brandy, brown sugar, and butter as some of the ingredients.

Has anyone seen or tasted a good recipe? Maybe with pecans, as well? I want to knock socks off, and will be adding vanilla bean whipped topping.

This may not even be at all what you are looking for, but I thought I would throw it at ya` anyway.

Peach-Blueberry Crisp
2 c frozen unsweetened peach slices
2 TBSP packed brown sugar
1 TBSP water
1/2 tsp pumpkin pie spice
1/4 c fresh or frozen blueberries
8 shortbread cookies or other crisp cookies, coursely crushed

This recipe says that you could substit. shortbread cookies such as gingersnaps, or pecan sandies.

In a med. saucepan, stir together peaches, brown sugar, water, and pump.pie spice.
boil; stirring to combine, reduce heat. Simmer, uncovered, for 4-5 min. or until thickened.
Gently stir in blueberries. remove from heat. cover and let stand for 5 min.
Spoon into dessert dishes. Sprinkle w/ cookies.

Sorry if this is not what your looking for. It was the only peach crisp recipe I could find.
