very easy. I just ate one for my snack. I like the topping on these. I bet you could do this same recipe but with another fruit instead. I may try bananas.

I love a lot of the recipes on allrecipes.com! That's my go-to place to look.

I ran bakeries for 50 years, we always used a standard batter for all muffins except bran which I avoided.
Made up batter in very large batches and chilled it before using, the batter stiffens up when chilled, thats the only way to get a huge head without it running all over the mold.
Mix the fruit in by hand, hand tools are too weak, get the mufins in the oven before the batter starts melting, go into a VERY hot oven, 425 is ok, immediately turn the heat down to 350.
The high initial heat stops the batter from melting all over the pan.
The topping yu linked is regular streusel, I don't like cinnamon as it kills the flavor of butter.

I made these two days ago. Nice and moist, and rounded up nicely in the pan. Half are already gone
I doubled the recipe (as the author of the recipe suggested) and filled them almost to the top of the muffin tins. (the double batch made 16 muffins)
There was WAY too much topping, but they are definitely a hit. When I make a double batch again, I'll make the topping for one batch, not two. Should be just about right.
BTW, I didn't have enough blueberries. I had some frozen (unsweetened) cranberries, so I put them into a bit of water/sugar, boiled them in a small pan for 2 minutes, then drained them.
There are only two of us - so I made a single batch. I agree, they were to die for. We just finished them. This recipe is a keeper, but yes - it was a little too much topping for one batch. I might re-do that for next time.
I made them this morning. The 'batter' was very thick -- I had to go online and double check with AllRecipes to makes sure I mixed it up right. They baked up great and tasted wonderful.
I think I'll bake some with cranberries and see how that goes.
Thanks again for recipe.
