If I make one thing REALLY well, it is salad! I have a ton of recipes and everyone LOVES them... I actually would eat salad all day long- don't really care for the rest... so I am constantly creating new and delicious ones... My last salad was a Strawberry Salad...

Mixed Dark Greens- Romaine, Spinich...
FF Raspberry vinegrette
Red Onions
Sliced Almonds
Feta
Sliced Strawberries... YUM

I am always looking for more salad recipes... anyone have any fab ones? Please share...

Some favorites:

Splendid Raspberry Spinach

chicken salad with tarragon(I use fresh tarragon, this is a nice light dinner)


Another nice one is dark romaine sprinkled with mandarin or tangerine segments, gorgonzola, and candied walnuts. (To candy the walnuts, toast them in a heavy pan with a bit of powdered sugar.)

My absolute favorite summer salad is Caprese.
Homegrown tomatoes, freshly torn basil leaves, good olive oil and vinegar on fresh mozzarella (bufula if you can get it.)
Some people like balsamic vinegar with this, but I usually use homemade opal basil vinegar (it is a very pretty pink.)

Mmmmmmmmmmm. I make this a lot. Have you ever had those little preserved tiny pears? I had them at a german restaurant once and would love to use them instead of reguar. They are kind of hard and very tart.

Would you share your raspberry vinegarette recipe (or anyone else reading)? Or what brand if you use pre made...

I've tried Ken's (uggh), Silver Palate (not sweet enough IMHO) and Annie's natural (pretty good for bottled). Haven't tried to make it yet.

My fav salad is very simple. Arugula tossed with lemon oil/lemon zest/olive oil, s&p...topped with crumbled roquefort. So simple and so good.

Ocean Spray Craisins
GiRard's White Balsamic dressing

Toss altogether and yummy!!

My staples (hmm...I guess I like fruity salads. It must be the whole sweet & savory thing.):

Baby spring salad mix topped with slivered almonds, mandarin orange segments, chopped scallions, and cooked shredded chicken (optional). Served with homemade ginger soy salad dressing (or store-bought when feeling lazy).

Baby spinach, chopped scallions, quartered strawberries, slivered almonds. Served with homemade poppyseed vinaigrette dressing.

Frisee (aka curly endive) greens (or just substitute spring salad mix) with fresh ripe Bosc pear wedges and dried cherries. Served with a homemade mustard chutney dressing.

We like our salad with Romaine or iceberg lettuce, carrots, and whatever else comes in the bag. Along with fresh tomatoes, zucchini, Romano cheese, chicken breast or salmon....
Oh and whatever salad dressing you like......

What no garlic? No balsamic vinegar? (that was typed with a sarcastic tone).

Gimme iceburg, sharp cheddar and some ooey-gooey French dressing please (WITH FAT, thank you). Throw in some bacon bits and a side of Macaroni Salad. Top it all off with a couple of boiled eggs and make sure there are plenty of crackers on the side.

It doesn't get any better than that! (ok, maybe some Bleu Cheese once in a while for variety!) LOL
