My family loves when I make tatertot casserole! It's so delish (mine has a couple more ingredients than fuzzy's recipe did). If interested, I'll post it for ya. Well, heck...I'll post it anyway. But I need to dig it up from my recipe journal then I'll post it a little later. Gotta get my little one ready for preschool!

Girl Scout Stew

We used to make this at camp outs in Girl Scouts. Brown hamburger. Drain off the grease, then add can(s) of vegetarian vegetable condensed soup (without the water the can recommends). Heat thoroughly and serve. I think the ratio was 1 pound hamburger to one can of soup and if you had a big enough pot, you could feed a whole heap of people with this stuff. We continued making it at home for mom's night off. It goes well with just about anything you want to add from garlic toast to biscuits to applesauce. It freezes and cans well, too.

I have several hamburger recipes.

My hamburger pie is different than the one posted above.. My husband loved this one.
1 lb hamburger
1 can green beans drained
1 can tomato soup
1/4 c chopped onion (optional)
Mashed potatoes
Shredded cheese
Salt/pepper little garlic powder

Brown hamburger, drain fat. Combine all ingredients in casserole dish. 1 soup can water. *I use stewed tomatoes sometimes*
Top with mashed potatoes and then cheese. I put in microwave heat until cheese melts. Cut and serve like pie.

Cuban Picadillo

2 lbs. lean ground beef
2 lg. onions
6 lg. garlic cloves
1/4 green pepper
4 bay leaves
1 tsp. oregano
1/2 tsp. cumin
1 jar capers drained. chop capers if they are large
1 chopped ripe tomato
Salt to taste

Chop fine onions, garlic, and green pepper. Saute in large skillet with small amount of oil. After it is cooked, add ground beef and mix and brown. Add oregano, bay leaves, cumin, and salt as the meat is browning.

When the meat is cooked all the way through, it may be drained some if needed. Add chopped tomato and capers. Mix well and cover. Let simmer for a short time until thoroughly cooked. Season to taste. Serve picadillo over rice.

At this point, you can either go the fast-n-easy way and add a can of cream of mushroom soup, or you can make up a roux and use that to make a cream sauce. Either way, once you get a nice mix of G-B, onion/garlic, peas and sauce, dump that in a wide shallow casserole dish. Top with spoonsful of left-over mashed potatoes. Bake at 350 until the G-B mixture starts to bubble up between the piles of mashed potatoes, about 20-30 minutes.

Sorry not to be more precise with the measurements; that's one of our classic "by dump and by dash" dishes, and it's very forgiving of variances in the proportions of the ingredients.
This is also very good with corn instead of peas, added mushrooms, and LOTS of cheddar cheese mixed in and on top of potatoes.

Here's a regular at our house, and it's a quicky:

Dorito Skillet

1 lb ground beef
1/2 medium onion chopped
salt, pepper

Salt and pepper the ground beef and brown in a skillet. Add onion and saute a while longer.

Mix into above mixture and melt together:
1 can of cream of mushroom soup
3/4 of soup can of milk
2" slice of cubed Velveeta

Add and heat until bubbly:
1 can of drained Mexicorn
1 small can of drained, sliced mushrooms

Add about 3 or 4 handfuls of roughly broken Spicy Nacho flavored Doritos and heat just until Doritos are soft.

brown the ground beef with onion, garlic, and diced tomato, of course S & P.
let simmer for about 20 min on very low heat.

Layer two sheets of phylo (fillo) dough (found in freezer/refridgerator section of grocery store near puff pastry & dessert area) in a buttered pan, then brush w/clarified butter. Repeat until you use half package (keep other half covered if two halves are not individually wrapped). Put the meat in, then finish with other half of dough.

Cut into pieces, using very good, sharp, non serrated knife. You can brush tops with an egg beaten with milk if you like. Bake at 350 for 30-40 minutes, till browned. If not browned after 40 min, turn on broiler but DON'T WALK AWAY IT WILL BURN IN AN INSTANT!!!!!!!!

Enjoy. This is called golash in Egypt (well they don't add tomatos but it's better with the tomatos, IMO) and it is so delicious!!! You can cut it very small if you want to have it as an appetizer.

What is the reason to cut it before you bake it mommytotwo? Does it dry out quicker if you cut it first?
