I didn't know they were supposed to be pressed and had never heard of them until about a year ago. Then a cute little health shop opened up. The panini I had today was turkey, avocado, tomato, and cheese on sourdough bread. Hold the cheese.
Since our Panini press broke, that is our technique as well.

One of my favorite pressed sandwiches (no heat involved) is a NOLA classic, the Muffaletta. I guess it is more weighted than pressed.
