I didn't know they were supposed to be pressed and had never heard of them until about a year ago. Then a cute little health shop opened up. The panini I had today was turkey, avocado, tomato, and cheese on sourdough bread. Hold the cheese.

My son made us a tuna and cheese Panini melt on his skillet and sat a heavy tawa on it and pressed on it.He improvised and I just stood there and watched him.Meanwhile he upgraded.

One of my favorite pressed sandwiches (no heat involved) is a NOLA classic, the Muffaletta. I guess it is more weighted than pressed.
