1/2 lb ground beef (75% lean) 1/4 tsp chili powder1/4 tsp cayenne pepper1/2 tsp paprika 1/2 tsp black pepper1/4 tsp salt dash of thyme and cinnamon1 tbsp chopped onions1 1/4 cups water
Cook 1 1/2 hours covered, then 1 1/2 hours uncovered.

Salsa Fresca;
2 med. size ripe tomatoes, quartered
1/4 med size onion
a springs cilantro(parsley)
2 cloves garlic
1 tsp. garlic salt
2 T. lemon juice
1 jalapeno9 1/3for mild 2/3 for med. all hot and spicy
Put all the ingred. in your blender or food processor and mix to consistency desired. serve with tortilla chips.

cheese dip:
38oz cream cheese, softened
1 jar old english cheese
2 jars pimentos cheese
chopped onion, green pepper, and pimento to taste.
mix well with mixer. servr with ritz crackers

Here's a good one-straight from Betty Crocker. Hey, if it ain't broke, don't fix it!
1&1/2 cups chopped tomatoes
1 to 3 jalapeño peppers [I would start with less unless you're used to it hot]
1 medium onion [about 1/2 a cup]
1 teaspoon salt
1/4 teaspoon cumin
1/8 clove crushed garlic
Mix and chill. This is really fresh tasting and very good!

I have a recipe for a corn salsa that I just love - unfortunately we're prepping to move and my recipe box is packed, and I haven't made it in a while. Fresh corn cut off the cob, roasted jalapenos, roasted red peppers, scallions, cilantro, lime juice. Dang! Now I want some - I may have to go unpack that box!

That sounds interesting. I've never had corn salsa before. Ha ha I'm laughing cause I know the feeling. We recently moved, and I had kitchen boxes stacked, too. I remember thinking of things I needed at the time that were packed away. I'm looking forward to trying your corn salsa, so when you get ready - bring it on!

Sweet White Corn Salsa
Yay - it was in the first box I looked in! Going to the Oregon Coast tomorrow for a family reunion, and this is what we're going to make as our contribution to the appetizer buffet.
1 firm ripe tomato
1 red bell pepper
2 fresh jalapenos
1 C fresh white corn, cut off the cob (of course LOL)
2 T fresh lime juice
2T canned black beans
1/4 C chopped fresh cilantro
1/4 C chopped scallions
Rinse tomato, bell pepper and jalapenos then char evenly on all sides. Cool, skin, seed, shop and put in a bowl. Add corn, lime juice, beans, cilantro and onions. Mix and serve, or cover and chill up to 3 days.
Yield 3 cups
Honestly, I prefer it freshly made instead of making it ahead of time and leaving it in the fridge for a day or two.

Here is mine. If I want it more a salsa I then add 2 medium tomatoes, another whole white or purple onion and a big sprig of fresh celantro out of the garden
4 fresh habanero peppers - 1 cup of white vinegar-6 red jalapeno-2 cloves garlic chopped-1/8 Tsp. ground oregano-half of a white onion-sprinkle of cumin-salt and pepper to taste

I like to throw in a couple of Chipoltle peppers in the can with adobo sauce in sometimes just for a smokey taste, depends on how hot you like it on how much you put in. Then the standards, tomatoes, onion, cilantro, jalapeno, garlic.
