My mother makes this pie using fresh strawberries when they are in season and the strawberry flavored gelatin! It is gorgeous!

And delicious, too. Some nice, fresh whipped cream on top and oo, baby!

I shared this in the Kitchen thread but I believe it bears repeating in this thread. One tip for a good pie crust is to chill your mixing bowl prior to making your pie crust dough in it.

When we lived in the Rio Grande Valley, there was a little hole-in-the-wall restaurant in Mission that served grapefruit pie.

I know, I know, it sounds awful. But it was sooooooooooo good.

They'd take the Texas Ruby Red grapefruits, the ones that are so sweet they taste like candy, and they'd remove all the membrane from the sections of the grapefruit. They'd heap those in a pre-baked pie shell - I remember it being piled at least 4" high - and then pour that gelatin-type glaze over all. The glaze they used was red, and it may have been the strawberry pie stuff you get in the stores, but I'll bet you could make your own at home from gelatin. And of course, it was topped with mounds of real whipped cream.

I haven't had a piece of grapefruit pie in decades, but I'll never, ever forget the flavor. Oh, my, but it was good.
