Did you ever add any form of cocoa to make a chocolate icing? We may still have a recipe off a box of some kind of chocolate powder for icing. I can't remember if this may have been used or not. Baking season is only a few weeks away now and I'm getting chocolate on the brain..

I guess I can barely bring myself to think about scalloped potatoes, because the thoughts will add five pounds.

Very simply, I take a large oval pyrex pan, rub it with cut garlic, smear it with soft butter and then layer thin sliced potato rounds. Between each layer I salt and pepper and sprinkle chips of butter. Then another layer. About five layers. Butter chips on top. Then I add a cup of whole milk. Then float a cup of heavy cream until its just peeking over the top layer of potato rounds. No cheese needed, trust me.

Bake at 325 until its a custard all the way down to the bottom. It will be a gentle golden brown on top.

This one is pretty bad for ya -

Frito pie:

crushed fritos, topped with Hormel meat chili, topped with nacho sauce, sour cream and green onions.

Disgustingly bad for you, but goood all the same.

I have a whole book of these unhealthy recipes. It was put out by my sister-in-law's church. I looked through it and shelved it in my bookcase. If the people of this church use these recipes, half of the church should be dead by next year.

My gosh, do these posts bring back memories. Mom used to make a Sunday, after Church special. chicken legs that were probably .19 lb, put a cup of veg. oil over them and bake for hrs., put these over mashed potatoes with 1 lb of butter. Growing up I wondered why my stomach hurt.

Another one of hers, was 1 lb ground chuck and white rice, don't forget to put about 1/2 of veg. oil in to cook the beef. Drain the meat after cooked---yeah right! I wish she was here today, so we could have a long talk---although I don't think she would listen.
