Default Help me recreate a childhood favorite....

As a young person I attended a very small country school for a short time.

One of the items served for lunch was what I can best describe as a Tuna Roll.

It was a yeast dough, not too heavy, as the base. The dough seemed to be rolled and spread with the filling. The filling was a creamy Tuna mix, moist but not wet. I believe I remember bits of chopped mushrooms, dark in color in the mix. The whole thing was rolled and sliced. The slices were baked (keep thinking cinnamon roll in style).

As this was served the lady in the cafeteria would pour a large spoonful of cheesesauce over the baked roll. The cheesesauce reminded me of a thin but more flavorful version of the sauce from Kraft Macaroni and Cheese.

We were always served greenbeans and strawberry shortcake with the roll.(completely unimportant to this, I know )

Anyway, I have a hankering for some nostalgic comfort food. Any ideas?

I did a quick google search and I don't think you will find such a recipe.

Since you remember the basic ingredients why not experiment. Saute some onions and celery with the mushrooms and add the tuna. It can't be too different from tuna casserole or tuna salad.

Finding a good bread recipe might be a challenge. I know my school cafeteria produced some incredible rolls. Perhaps there is a site for school cafeteria recipes?

From the google search it seems this generation will remember things like tuna/pita sandwiches and reduced fat selections.

OMG, school rolls were to die for!!! Would love to be able to get that recipe!!!! May have to start a thread? Whatcha think?

Those tuna rolls sound wonderful! Let me know if you ever find the recipe?

When I was growing up, my mom made us a similar recipe very often. I now find myself making it twice a year or so.

You make a dough using the recipe on the Bisquick box (I think it is the one for biscuits). Spread it out into a rectangle shape and smooth some canned tuna mixed with mayo on it. Roll into a log and slice (like the cinnamon rolls). Place on a baking sheet and bake according to the directions on the Bisquick.

Meanwhile, heat up some cream of mushroom soup. Pour over the bisquits when they are done.

So yummy and comforting! To me, at least

Tuna Roll

2 cups tuna, drained
4 ounces shredded Cheddar cheese
1 teaspoon celery salt
1/4 teaspoon pepper
1 egg
2 cups Bisquick
1/2 cup water

Cheese Sauce:
1 cup Cheddar cheese
1/4 cup Bisquick
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup butter
2 cups milk

Mix tuna, cheese, celery salt, pepper and egg together. Set aside.

Mix Bisquick and water to form a soft dough. Roll into a 12 x 14-inch rectangle and spread tuna mixture over. Roll up and join ends. Shape into a circle. Place on cookie sheet and bake at 350 degrees F for 25 to 30 minutes. Serve Cheese Sauce over roll.

Cheese Sauce: Melt butter in pan. Add Bisquick, salt and pepper, cook until bubbly. Remove from heat and add milk. Cook until boiling, stirring constantly. Boil 1 minute. Stir in cheese until melted.

Hi, I know the recipe you are talking about and got to this page searching for the recipe. I had the recipe card for ages and haven't made it in a few years and can't find the card. I remember the ingredients thoug

Filling:
2 cans drained tuna
1 can mushrooms
1/2 can cream of mushroom soup
1/4 cup sauteed onions

Bisquick - these are the directions I am fuzzy with.....

2 cups bisquick
1/4 cup milk ???? (these would be according to package directions)

Roll out the bisquick mix - place the filling on it and roll it up - cut slices into the top of the roll and bake in oven (can't recall how long or what temp)

take the remaining 1/2 can or cream of mushroom woup - add 1/4 cup milk in sauce pan and use this to pout over the tuna roll.

if anyone can fill in the temp - cooking time and bisquick amounts - i would be greatly appreciated.

Since you say it was in a yeast dough, get some frozen bread dough & let thaw, roll out & proceed with the good recipes others have posted.

I'll bet you could use a large can of crescent rolls and roll out the dough as the base for the tuna filling.
