You can substitute any kind of stock, or a can (or two) of chopped tomatoes in place of the soup from any recipe - all of them are just liquid in one form or another, with seasoning.
You can even use plain old water instead of the soup, and just add your own seasoning - salt, pepper, paprike, fajita seasoning, worcestershire sauce.
If you want the kind of creaminess the soup can add, wait until the end of the cooking and then stir in cream, sour cream, yogurt or cream cheese, grated parmesan.
Top tip for an extra-delicious and rich flavor..... stir in a big chunk of butter at the end
