Protein and fiber, and (no added sugar)fruit juice. Precook some hardboiled eggs and have them in the fridge. Grab some high fiber cereal or toast. The egg will keep you from getting hungry all morning and the fiber will keep your colon healthy and happy.
This being said, if you're an empty nester I assume you are a woman "of a certain age"-so am I. If you don't feel like eating breakfast..do as you damn please and don't worry about it.

I'm into muesli, greek yoghurt and some fresh raspberries at the moment. The yoghurt and raspberries give the muesli a kick.....and you feel healthy eaing it!

I also like to bake "breakfast cookies". You can google recipes. They are very filling and good for you. I also like to do bananas and yogurt. I also found a great microwave omelet maker. I put ham cubes, chopped onion, shredded cheese and eggs that have been whisked with milk with salt and pepper in the omelet maker and it cooks itself easily. Like the others, sometimes I keep cooked bacon in the fridge. I also found a little egg cooker at Wal Mart also next to the omelette maker and it makes eggs in the microwave so you can make your own egg at home like they have in egg mcmuffins. I will sometimes fix one of those, make toast, add the previously cooked bacon, add a slice of cheese and microwave that together for a minute. I love that new Kashi granola cereal also. Mmmm.

Here's a recipe that is easy! (I don't remember where I got it!)

Mock "Steak" and Eggs

12 -thin slices deli roast beef
6 - slices sharp cheedar cheese - halved
12 -Eggs

Get out your muffin pan. Spray with pam. Take a slice of beef, and press into and up the sides of each cup. Add a piece of cheese. Break an egg on top of the cheese. Bake uncovered at 350 for about 20 minutes or until eggs are completely set.

Chocolate Peanut Butter Bar
Recipe By :Weight Watchers
Serving Size : 1
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 tablespoons black coffee -- or 2 tablespoons hot water
1 tablespoon peanut butter, chunky
1 packet reduced-calorie Chocolate dairy drink mix -- Alba or Weight Watchers
3/4 ounce uncooked oatmeal
2 tablespoons raisins -- dark

Using a fork, in small mixing bowl combine coffee (or water) and peanut butter, mixing until peanut butter is softened. Add remaining ingredients and mix thoroughly (mixture will be stiff and sticky). Transfer mixture to sheet of wax paper or plastic wrap and, using hands, press mixture together and shape into a log about 5 inches long and 1 1/2 inches wide. Tightly wrap long wax paper or plastic wrap and freeze overnight.
Magazine's Note: For a softer bar, remove from the freezer about 1 hour before serving & store in the refrigerator.
