I could have written your post ...I always grab something on the way out the door...
Here are some things I eat in the car...

A string cheese, a kaishi bar and a piece of fruit.
A protein smoothy that takes 1 minute to blend.
A peanut butter & banana sandwich with whole grain bread.
A cup of oatmeal that I microwave with nuts & apples.
Yogart mixed with fruit and nuts
A tortilla rolled up with cheese and luncheon meat.

I make pancakes every Saturday morning (search "pancake recipe" on Bing and there's the Good Old Fashioned pancake recipe) and add 1/4 cup canned pumpkin to each batch. Then refrigerate the cooked pancakes and during the week I warm them for 30 seconds in the microwave. I do this for my kids so I can send them off with a hot breakfast.

This is my solution to being just me in the morning.

I've bought little Zip Lock bowls for egg molds. I've thrown away the wrapping so I can't give you any details other than the bowls are about 2½ or 3 inches in diameter.

Anyway, I buy a dozen eggs, two packages of bagels and/or English Muffins, that is 12, or some other bread variety, pre cooked sausage and cheese.

I have a 1200 watt microwave oven so the directions I give are for that power of oven. So you will have to adjust for yours. I also use "jumbo" eggs. Smaller eggs, shorter cooking times.

I break 4 eggs (at a time) into the zip lock bowls, stir just enough to break the yoke, and microwave for 7min 20 secs at 30% power. It took me a while to come up with the time and power setting. The eggs just drop out of the bowls when they're done. The 30% assures no exploding eggs.

Then, microwave the pre cooked sausage patties per directions on the package. In my case, the package directions call for 50% power but I use 60% to melt away a little more fat.

After I do all that I get 1 quart storage bags and, after the eggs and sausage patties have cooled, put one egg and sausage patty into one bag with a bagel/muffin with a slice of cheese. After I've packaged the dozen sandwiches I'll put 2 in the refrigerator and the rest in the freezer. When it's time for breakfast I put the bagel/muffin in the toaster and the egg/sausage patty in the microwave one more time for 1 minute or so at 60% power. Put the cheese between the egg and sausage, put that between the bagel/muffin slices and I gots me a decent breakfast sandwich in about 3 minutes. Thaw your sandwiches in the 'frig, it's best that way.

Cooking and preparation, including clean up is about 1 hour every 12 days, assuming you eat one sandwich a day. And it's less than 50% of McDonald's sandwiches and a hell'va lot less grease and more filling.
