Jasmine-I mix mayo w/onion powder, garlic powder, chopped sage, thyme, salt/pepper and rub that all over the bird-no basting necessary. Also I put celery,onion,carrot,garlic, sage,thyme in the cavity.

I have never heard of mixing the spices with mayo. I usually mixed them with butter and put under the skin. How much mayo do you use?
Jessie-probably 1/2 cup and rub it in really well. Someone told me this 30 yrs ago and I thought they were nuts-been doing it ever since. The meat stays moist and the skin is awesome.

I could probably do the same thing with just a breast don't you think? I can't wait to try it!!
I prepare my own ... crushed garlic, comino, little bit of oregano, onion powder, salt ---all mixed in orange juice..I pour it all over the turkey the night before and by early tomorrow morning place it in oven to cook!!
On the turkey I use Rosemary and pads of butter under the skin in several areas of the bird. In the cavity I add rosemary orange pieces, carrot and celery. With 1/2 cup of white wine. I also 1/2 cup on the bottom of the roasting pan.
On the skin garlic powder and kosher salt. I cover the turkey for the until about the last half hour and the skin gets good and crispy.
Lacey, I think I am going to try the your mayo method today. My turkey is brined, so I know it does not need any salt, but all the other spices/herbs sound good.
