Ingredients:
1-2 Apples
Pancake Mix
Cinnamon (powder)

To Prep;
Mix Pancake batter as per instructions. (add cinnamon).
Slice apples into approx 1/8 in rings (cut out core).(with or w/o skin).
Dip slices into batter and then into skillet.
Spoon extra batter on top if desired.
Three slices will make one serving.
Fry until batter shows normal bubbles before turning over.
Do not over cook.
Serve on plate and add syrup.
Enjoy as I did this morning.

That sounds really good. There's a local place here known for their apple pancakes. But, since who has money to eat out anymore, I've never tried it. These should fit the bill!

I love the German Baby and/or Apple pancake from the Original Pancake House.

I found a recipe and made my own. It's very simple--3/4 eggs, flour, milk and sugar if you like--I didn't use much and it turned out fine. Some of recipes called for 1/2 C to 1 C of sugar, FWIW.

The apple rings would be tasty I know.

It has ben many decades but seem to recall my mother also using the apple slices I mentioned being dipped into crepe batter (same batter as for Hungarian crepes). What she prepared was a apple ring coated in crepe batter that we ate as a dessert and not a meal. Remember going to the fridge and taking a cold slice to eat. Going to try it this weekend...its been a long time...I'm getting old and forgetful. Steve
