Pecan Pie Bars for Blueberry
For Blueberry as promised.
Pecan Pie Bars
3 cups all purpose flour
1/4 cup + 2 T sugar
3/4 cup soft butter
3/4 tsp salt
Preheat oven to 350.
Grease jelly roll pan. 15 1/2 x 10 1/2 x 1 inch.
Beat flour sugar and salt in large bowl until crumbly.
( I use a pastry blender. )
Mixture will be dry.
Press firmly in pan with a fork.
Bake +/- 20 minutes until ight golden brown.
Prepare fillng. Pour over baked layer and spread evenly.
Bake +/- 25 minutes until filling is set
Filling
4 eggs slightly beaten
1 1/2 cups sugar
1 1/2 cups Karo syrup
3 T melted butter
1 1/2 tsp vanilla
3 cups chopped pecans
Mix all but pecans until well blended. Stir in pecans.
Note.
I dont have a jely roll pan so I use a large Pyrex baking dish about that size.and adjust the baking time.
