Recommendations sought.


I am doing frozen microwave meals for a family member who has been sent out of town by his work. I'd like to minimize the work of making the meals. So, what can I do in one day that will make a few different things without having to cook completely different things.


Example of what I am hoping for: I made two giant pots of spaghetti sauce and turned that into pans of lasagna, elbow mac, and two different flavors of ravioli (store bought). It involved cooking the sauce and boiling a few noodles. A big project, but it certainly could have been worse.


I appreciate any ideas.

Rice/ enchilada sauce? Sorry I will have to ask my daughter for more specifics later, but those are two of her 'go to' ingredients when she's making batch meals for the freezer. She makes big pots of both and then adds other ingredients to vary the dishes.

Make a vat of hearty chicken soup.

Use it as a base for other meals:

- Chicken and dumplings, with the dumplings frozen in a separate package.
- Chicken chili
- Chicken curry and rice
- Chicken mini potpies

Cooked chicken breast:
pot pie
chicken and rice soup
enchiladas
rolled in corn tortillas with cheese and spice and baked - no crumbs sandwiches

Ok, I asked her about this. She generally spends a day cooking and ends up with about a month's worth of meals to freeze, adjust accordingly.
The basics-
-Cooked ground or shredded meat(s), usually beef and/or chicken for her
-Separate bowls of sauteed onions, mixed peppers, and mushrooms
-A big pot of cooked rice and another of pasta, she really likes jumbo shells for stuffing
-A big pot of tomato sauce that can be divided and seasoned
-Various spices and seasoning mixes, make your own or use pre-made packets, she likes to have italian, cajun, taco, and enchilada on hand
-A selection of cheeses
-Optional, whatever else you have on hand that you want to toss in, canned corn, spinach, green onions, olives, etc

Mix and match whatever combination of ingredients appeal to you, we use the cheap divided meal prep containers from walmart so you can toss in a side vegetable or desert too.
rice+meat+onions and mushrooms+cajun seasoning
rice+meat+onions and peppers+tomato sauce+enchilada seasoning+shredded cheese
shells+meat+onions and peppers+taco seasoning+shredded cheese
shells+meat+onions, peppers and mushrooms+tomato sauce+italian seasoning+ricotta or mozzarella

With ground beef, make a vegetable beef soup and a pot of chili/beans.

Another chicken recipe that freezes well is chicken corn chowder.

Beef stew meat make a beef stew with potatoes/onions/carrots and use part of the stew meat to make beef stroganoff.

If you are looking for breakfast meals and the person will eat quiche, that is really easy to make using a store bought crust and the individual slices freeze and microwave well.

I made a crock pot of beef and black bean chili, a baked bean pot of black bean and pork chili, then I fried up a bunch of corn tortillas and made and froze:


Two big pans of enchilada casserole
16 frozen burritos, 2 slightly different flavors

2 dozen taquitoes
chili, which can be eaten as a bowl of chili or made into nachos.


That turned out to be a bit of work since I was by myself. it helps to have two people working on it.


I've got a 10 pound bag of frozen boneless skinless chicken breast, so I will use some of the suggestions from y'all to make that into chicken based meals.


I buy tortillas from the store. I don't make my own and for this project, I used the grated cheese and didn't grate my own. Both are time savers.
