are these easy to serve after cooled? are they like a banana bread texture or gooey? are they 2.5 or 2 oz in size. sorry, but i just saw this recipe and to be honest, i have not gone to the kitchen to try it. i am looking for a taste similar to the southern pet ritz pecan...i want guests to be able to pick up the bite-size delights at a morning brunch. any preview would be appreciated.

I actually mentioned to my husband that these would be perfect for a brunch. After cooling they taste even more delicious and taste indeed like a pecan pie! I will go try to take some pics. I cut the butter back a tad from the recipe and they are like a muffin and not gooey. My oven is hot so 12 min did fine for the small ones. I also made some larger muffins as well! Talk about easy. Mine popped right out of the pan with no problem.

Cool SMG glad you made them & liked them.

Yes these would work great at a brunch I have had the platter licked clean wherever I have taken them. In fact our youth group use to request these muffins quite often for Sunday night bible study over pizza. As you can see from SMG pictures they don't "crown" like most muffins but the flavor more than makes up for that missing crown.

SMG, can we ban Jaxson for posting this recipe? Because my butt is about to get even bigger and I don't think that's fair.

LOL, too funny!

I am right there with ya Nicole. I think we are going to have to go frequent the Shopping forum for bigger sized clothes!

I think the mini muffins are the most dangerous of all muffins because you can pop them in your mouth continually throughout the day.

Ha, ha that's funny. I used to do that with Hershey Kisses and my DH would always ask who ate all the candy and how did it disappear so fast? I am now not allowed to buy Hershey kisses.
