I have a bunch of day old rolls (big ones, French variety) that are cooling their heels in the freezer. Hubby doesn't like bread pudding and since it's just we two if I made some I'd have to eat the whole thing myself. My mouth wouldn't necessarily mind that, but my torso wouldn't be happy with the extra calories, lol.

And I'm all croutoned and toasted out.

So does anyone out there know other creative ways to use up stale rolls/bread?

Try this. It's a great summer salad.

Panzanella Recipe at Epicurious.com

Also croutons might be a way to. They freeze great.

That panzanella recipe looks great, sayulita. Thanks. It's a keeper.

Making breadcrumbs is also a good idea, Lacey. And it made me realize that I could cut it into small cubes, season it, and keep it in the freezer for homemade stuffing, too. Thanks!

I was going to say breadcrumbs also Lacey! (italian, seasoned, plain) I would also say to toast it and put a spread on it or bruschetta. Also toasted for sh.it on a shingle or something like that. Grilled cheese. Cheese toast. Garlic bread and freeze for use later.

Toast. Or cover the bread until its soaked in honey or jam and eat it that way.

But usually, when I'm not desperate for food, I'll just break it up and throw it outside to the birds, squirrels...

I whirl it in a food processor, add some Parmesan cheese, seasoned salt, garlic powder, cayenne, kosher salt and store in freezer bags in freezer.

Then use as breading for boneless fried chicken, in meatballs and meatloaf.
