Does anyone have a good recipe for zucchini bread??

Zucchini Bread - makes 2 loaves
3 cups sugar
3 eggs
1 cup oil
2 cups grated zucchini
3 cups flour
1 tsp vanilla
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/4 cup whole milk
2/3 cup nuts, optional

Preheat the oven to 350. Blend the sugar, eggs & oil in a large bowl. Sti in the zucchini. Add the flour, vanilla, cinnamon, baking powder, baking soda, salt & milk. Stir in the nuts, if using & beat well. Grease & flour 2 loaf pans. Pour the zucchini mixture into the pans. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.

and if you want to use self-rising flour, here's my recipe:

Zucchinni Bread
3 cups self-rising flour
3 eggs
1 cup oil
2 cups sugar
2 tsps. cinnamon
2 tsps. vanilla extract
1 1/2 cups pecan pieces
2 cups grated zucchinni with peel

Mix altogether in large bowl. Grease 2 loaf pans. Bake at 350 for 45 minutes. If not set on top of loaves, cook 10-15 minutes longer.
