Hello!

I would like to grab a way to prepare corn mush for a group of elete people! It cannot be mushy; Just firm 'n tight!

My family called this polenta...although I don't know if this is the correct term for it.

The way my mom prepared it was to make the mush/polenta and then pat it into a block. She used to use a velveeta cheese box lined with wax paper to make a block. After chilling for several hours .. cut it off the block at about 1/3 inch thickness slices. Dip in dry cornmeal or a little flour and fry in melted butter (or you can use small amount of bacon drippings if you dare) until brown and crisp on the edges on both sides. Serves with lots of maple syrup (and butter). Enjoy!

Her recipe:
First measure 2 3/4 cups of water into a medium saucepan and bring to a boil. Mix 1 cup corn meal with 1 cup cold water. Add 1 tblspn sugar and scant teaspoon salt mix well into the corn meal mixture. After the 2 3/4 cups of water is boiling, gradually add the corn meal/cold water mixture. Cook until thickened and stir constantly. After thickened, cover, reduce heat and simmer for about 25 minutes. Pour into lined Velveeta box (or a butter greased small loaf pan) and chill. Fry in butter and serve with syrup. (I personally like to make this with white corn meal but lots of people like yellow meal better.)

You can also purchase blocks of corn meal mush in the grocery store....and it is tasty and less time consuming.

BLUE CORN FINGERS

Use 1 C blue cornmeal per serving; to each C cornmeal use 1 & 1/2 C water.

Sift the cornmeal slowly into boiling water; do not let lumps form! Stir over low heat until it reaches the consistency you want. Pour into a pan lined with parchment and refrigerate. Slice into finger-length slabs, 1" wide. Dust all cut surfaces with salt. Pop under the broiler for 4 to 5 minutes until they start to brown.
