I use bell pepper very sparingly in my Tex-Mex dishes because it will over power the dish, for carne guisada, I would use less than 1/4 of a small pepper.

I use more of black pepper, garlic and cumin taste in mine.

In dishes where I don't like the flavor of green bell peppers (like stuffed peppers), I find that red or orange bell peppers taste (and smell) much better.

Default Crock pot cooking...

I live alone so didn't have a crock pot for the longest time but found a 1 qt one for cheap so got it a while back. It is great to be back to cooking with one though.

Put together an easy chili recipe this morning... half an hour to put it together then 6-8 hours to stew. Now the house smells like chili and I'm drooling already. Going to be a rough day waiting for it to finish.

Anyway... any good recipes you like to put together? Personal favorites?

I love cubed steaks in the crock pot....I just throw in the cubed steaks, an envelope of powdered gravy mix and 1/3 cup water....let it cook until the steaks fall apart and serve over white rice.
I also love chicken breasts cooked in spaghetti sauce, and then when I serve it, I sprinkle grated sharp cheese over top....yummy!

I LOVE crock pot chili. My dh makes a mean chili.
I keep telling him tis the season.

He's home now. Retired.
Still, when u prepare, do you feel comfortable walking very far away while it's plugged in and cooking ? Have you gone to work or the mall while it's on?

I've seen some cookbooks for the crock in several of the big name bookstores.

I've left the house and ran errands or hit up clients while it was running. It runs at a low temp so there really isn't much risk as long as the unit isn't damaged.

Made crock pot chili Saturday. It was good.

When you have leftover vegetables, don't toss them out no matter how small the amount is. The same with rice and pasta. Get a big freezer container and put your leftovers in there. When you have enough for a good soup, just defrost it and put it in the crock pot with stock and whatever meat scraps you have. Salt and pepper to taste.

Cook on low 4-6 hours.

We do that...I call it "Garbage Stew".
