Breakfast casserole
My wife loves this breakfast casserole. Most recipes call for bread, I use Pilsbury Crescent Rolls:
7 eggs
1 ½ cup milk
2 cups cheddar cheese
1 lb. crumbled cooked sausage
Crescent rolls
Beat the eggs and milk with a whisk, lay down the crescent rolls into a 9x13 baking dish. Put the cooked sausage in first, then the cheese and then pour the egg mixture over everything. Bake at 425 for 35 minutes.
We use regular sausage but you could always use hot or sweet. My temp may be slightly high because my oven seems to need a higher temp to cook correctly.

I make a similar recipe but w/ bread slices crumbled up instead of crescent rolls (which sound good) and just mix altogether. Havent made it in a while but I think I used to assemble it the night before and then bake it in the AM, was particularly nice for Christmas morning when there's a lot going on although of course you can make it any time. Thx for the reminder!

I also do something similar with crumbled french bread, and ham. I usually add some onions and maybe even small cooked cubes of potatoes. This kind of recipe is so versatile. I believe it's called a strata? Thanks for sharing!

I make one just like yours but I put them in muffin tins so we can eat them while we are unwrapping gifts on Christmas morning! I use the buttermilk biscuits tho.
I also have this recipe for a breakfast casserole that I clipped out of the paper a couple years ago. I make this on Thanksgiving morning.
1 package brown sugar or maple breakfast sausage links
12 eggs
1 30 oz can pumpkin pie filling
1 12 oz can evaporated milk
1 tsp cinnamon
1 teaspoon vanilla
15 slices white bread cubed
Powdered sugar
Maple syrup
Cook sausage. Cool slightly. Cut into 1/4 inch slices. In a large bowl whisk eggs, combine sausage and bread. Add pumpkin. Stir to coat. Transfer to a greased 13x9 baking dish.
Bake uncovered at 350 for 35-40 minutes or until knife inserted in center comes out clean. Dust w/ powdered sugar. Serve on a plate in a pool of syrup.
I've halved the recipe and used a smaller dish too. Also you can use any kind of bread, I'm going to try cinnamon swirl next time.

Sounds very interesting w/ the pumpkin pie filling and the maple syrup and the muffin tins (very neat idea!), may just try halving it and trying it on one of these upcoming weekends

We like to shake up our traditional sausage egg casserole by adding some maple syrup into the sausage after cooking and draining it. Gives just the right amount of sweetness
