When our oldest moved to an apartment we got him Cooking with 4 ingredients:

He loved it and 4 ingredients was just enough to give the dishes good flavor, but not be so many as to make it a difficult dish to shop for and cook.

Came across a great book for new cooks recently: Jamie's Food Revolution by Jamie Oliver.

Mostly 20 minute meals with a "wow" factor. This would be a great book to have on hand when a young man wants to impress a date. Many pictures with a lot of "how to" advice. I think Olivers writing style will appeal to a young reader.

The cook book I always give to recent HS grads: The Clueless Vegetarian by Evelyn Raab. Simple,frugal, meatless meals without any preaching. Handly little softcover book that won't take too much space in a dorm room/apartment.
