i am using green onions, celery, and okra in mine. a little unorthodox but it is what i had around the house. i don't have a clue how to cook collards, I am getting those from a can.

I thought to cook collards right you had to use fatback and cook them all day?

[I found out I liked actually collards when my husband simply stir fried them in olive oil with onions until they were limp]

I thought to be official you had to get "hog jowl" too, not just bacon or pork....

Make southern cornbread now, from scratch without the sugar [though some southerners do use it but the tea has to be supersaturated]...LOL I grew up with southern grandparents...who raised a souther daughter......I despised vegetables until I grew up and learned about lightly steaming them.

my grandma always told me that the secret to cornbread is sour cream.

I don't cook cornbread so your mileage may vary.
