I tried a new recipe for salmon loaf tonight. Instead of white flour, it had oatmeal. Instead of milk, it had yogurt. It was very, very good.
I added a sauce on top consisting of 1/2 cup ketchup, 2 T brown sugar, 1/4 cup Worcestershire sauce and a squeeze of honey mustard, spooned on top prior to baking.
This was a very moist and tasty rendition of an old standby. I made two mini loaves as I cook for two--so we have one for tomorrow.
Here's the recipe. I only had one egg, so I added an extra 1/4 cup yogurt to make up for its lack.
