Default Family Favorite Chicken Casseroles!!!

"King Ranch Casserole" AKA...Chicken Enchilada Casserole.
Ingredients:
3 Chicken breasts or 1 fryer.. stewed, boned , cut into bite sized pieces.
1 can Cream of Chicken Soup............Campbell's
1 can Cream of Mushroom Soup.........Campbell's
1 can (10oz) Rotel or Red Gold (diced tomatoes & green chilies)
1 pkg corn tortillas (cut in quarters) a dozen is enough.
1 medium onion diced (chopped) whatever!
1/2 lb or (a bit) more grated cheddar cheese (mild)

Mix soups and Rotel in a bowl.

In a greased casserole dish layer chicken at bottom, soups , cheese, onions, tortillas. Layer as you like until all ingredients are used. End with cheese on top with onions. Place in 350* oven for 1 hour. Enjoy!!

Yum-morning Satx! Good thread.

Butter casserole dish.
Sprinkle package Lipton onion soup
Sprinkle a layer of rice
Lay chicken over rice
Mix can cream of chicken soup w/water til soup consistency, pour over.
Cover. cook 350 for 1 hr.

Another one-
In a casserole layer of brocolli or asparagus.
Top with boneless skinless breasts
Top each with a mushroom cap
Mix 1 can cream mushroom soup, 1 cup sour cream, sherry wine.
Pour over making sure everything covered with sauce
Sprinkle with paprika
Bake 350 45 min to 1 hr.

This is what we use leftover turkey for except we use chips instead of tortillas.

Sprinkle a 4 oz can of drained sliced black olives on the casserole. Makes it more 'enchilada-like' :-)

Here's a similar recipe to satx56

Chunky Bean and Chicken Chili
1 lb boneless, skinles chicken breasts
cut in bite size peices
2tsp cooking oil
2 19oz cans of cannellini beans , rinsed and drained
6oz shredded Monterey jack cheese
Jalapeno peppers to taste
(I use the GOYA in the jar, cut up about 6 small, this is our tastes, you
can use more or less)
1- 14oz container chicken broth
1/2 cup of water
3 cups tortilla chips

In 4-5 quart dutch oven brown chicken in oil.
Add beans
1 cup cheese
container of broth
1/2 cup water
2 cups coarsely crushed chips
Bring to a boil, reduce heat, simmer uncovered 5min

Preheat broiler
On baking sheet place 1 cup (remainder) tortilla chips
1/2 cup (remainder) cheese, heat 1-2 min

Serve Chili w/tortilla chips

I just printed this off. It's getting made at my house soon. I spotted a can of Rotel in my cupboard the other day and wondered what I'd do with them. Now I know! Thanks.

I have made this before but not with the soups think I will try this sounds delicious. I am always on the lookout for differant ways to do chicken.

If you want to experiment : I'm quite sure some chopped celery or cream of celery soup would add another dimension to this recipe. Black or green olives as suggested too ....
