My DH is vegetarian so when I cook chicken I take the easy way .....

Rub the pieces with olive oil, salt & pepper and roast. While the chicken is roasting low simmer a little garlic in some lemon juice and salt. When the chicken is nearly done, pour the lemon juice over it so it will be absorbed by the meat until finished off.

Well is not the regular store brand chicken, it's the air chilled smart chicken brand. You can get regular air chiled or organic air chilled.
