My mother has always been able to "throw together" a dish using just the ingredients she has on hand, no recipes. Her casseroles are always out of this world.
Sadly, I do not have that talent. My cooking isn't bad (the opposite actually), it just isn't all that creative. My husband is probably more of a chef than I am, even though I do most of the cooking.

What type of food and dishes do you like to cook? I'll bet that you are more creative than you think and give yourself credit for....It took me quite awhile to gain confidence in my cooking. It didn't happen overnight....It took me years to gain the confidence to just go with my feelings and "throw things together." In the early years I "stuck by the book' because I didn't feel creative at all....and didn't view myself as a "good cook."....But later in life I gained the confidence to experiment and try new things....Some of us "bloom" a little later but this doesn't mean that we don't have what it takes to be a "creative cook." ......Don't give up or "write yourself off."

We usually have some type of meat/fish, side dish and veggie for dinner. I can cook a lot of different types of meals but I'm not that great with using leftovers to make other dishes. I often come here for inspiration (ex: what do I do with leftover pork roast??) and recipes.
I used to go totally by the book with my cooking but I have started to "tweak" some recipes lately and they haven't turned out too bad. Not what I'd call creative, really, but a step in that direction.

Good that you are able to give yourself credit for the steps you have taken.....I think that you have the "makings" to be a very creative cook....But it takes confidence to be creative....Having doubts and uncertainties about your skills and your ability to be creative puts up "blocks.".....My brain "freezes up" and I develop "writer's block" when I am trying to be "too perfect.".....Everything comes to a standstill and my writing suffers when I start to doubt myself...or when I compare myself unfavorably to others.......There is more than "meets the eye" when it comes to being creative and allowing our "creative juices" to flow.......I honestly believe that you will go on to become a very creative cook and surprise yourself.

I'm going to keep experimenting and hopefully I'll be able to step beyond the tried and true.

Thanks for sharing. Boy oh boy....I have definitely had my share of "flops" in the kitchen....It happens to everyone at times. Some dishes may not be "flops" but they just don't taste as good as expected....My sense of humor is my "saving grace." And I don't set myself up as a "clone of Martha Stewart.".......I always let family and friends know when I "invent" new recipes......I warn everyone that I have no idea how it will turn out......because I don't. It's always a risk and a gamble. I don't judge myself "bad" or "incompetent" just because I have some "flops" once in awhile. ........I try to learn from my "mistakes" instead of letting them "hold me back."
I have always cooked based on whats in the cuppord and frig. But I like to amend with seasonings. I added to my stock of dried herbs recently and when I can buy fresh ones. And am working my way into really yummy flavors of stuff I see on the Food channel. I was on a ginger binge for awhile and still heavily use it, but have discovered apple juice, aged balsamic vinegar and raisens in combination lately. And tomatoes and spinich. And everything has onions and garlic in it.
When something comes out really really good, I write down the recipe. It may not stay the same but then I cook by feel. I find that I want to eat when I have something I can't stop sampling. I make this stuff called "the relish" which is mostly ginger and a great deal of vegies. I got it just right and stuff got moved around and can't fine my reciepe. DRATS!
