Yep, gators would be a hindrance to fishin' in FL...
Look around & join an online Florida fishing forum. Ask where other members catch fish safely, where the fishin' is good & ask how they catchem (bait,lure, etc).
I love to catch & release all bass, for the Fun's. Once in a great while i eat a bass, usually Striped Bass.
For eating, i love most, deepfried fillets of channel catfish, crappie, red eared perch...YUM
Fried taters & sweet onions, homemade coleslaw, cornbread...

If i'm not going to eat a fish, i release it to grow & spawn, spreading its good genes. The best tasting fish are pansize about 12"-14".

I think I've only eaten catfish once or twice in my life. I wouldn't even remember the taste of it. Bass on the other hand is one my favorite fish to eat.

That's ok, there are many species of bass, among them is ocean Sea Bass.
Catfish caught out of clean clear water is yummy. If the catfish (or other species) lives in muddy waters it can taste muddy, not nearly as good.
I ate exactly one bass, just had to see what they tasted like. I was strictly catch and release, not hard for me to do since I have all the fish I can eat available to me anyways. My bass boat went in the divorce. Along with the truck... lol Its ok, it was for a worthy cause and I have no ire. Should I end up settling in bass country I will pick up another one. I loved being out on the lake in the early morning before the jet skiers and such showed up. Mist on the water, the serenity, coffee which tasted just a little bit better than it could ever taste at home looking out.
Apparently in South Florida the most sought out fish is Sailfish (what the heck is that?), swordfish, dolphin (mahi-mahi), sharks, barracuda and snapper.

Before, i have caught Hammerhead Sharks & Peacock Bass, in Hawaii. I haven't caught those other ones. I've caught Leopard Sharks by Moss Landing, CA
I've never spent any time in Florida.
