It was a simple light cheese sauce (mornay)...very easy. I actually made it and ate dinner since I last posted.

Make a roux...it's equal parts fat and flour (I use butter but you can use olive oil. If you use pan drippings you need to use slightly more drippings than flour).

For this dish it was 2tbsp flour, 2tbsp butter. Heat butter until it's melted, whisk in flour and cook over med-high heat until golden. Whisk in 1 cup water and 1 cup milk. Add 3/4 cup grated parm or romano. Simmer until thickened.

Sometimes I use 1/2 cup shredded swiss and 1/2 cup parm. Didn't have swiss in the fridge though.

BTW J6 I think my wife is on to us- she made sugar cookies last night.
It's cold...pasta is always great on a cold night!

LOL...I haven't made one cookie yet! Last year I started making cookies about 3 weeks in advance and they were almost all gone by Christmas Eve. I think I'll start them over this weekend.

I do LOVE decorating sugar cookies. I get into my zone and I go deaf. LOL

Best part is eating them!

Last year I entered mine into a photo contest and got 3rd place (it was other baked goods too...not just cookies)
