Perhaps you can learn to contain your immature side, that can take at least week or two. In the meantime, write down the qualities you seek in a partner and list some of your good qualities.
When you find someone you like, what is the reason for scheduling dates so far apart? Three to four dates shouldn't take 2 months. You're giving her time to find someone else, and you don't give her the impression you are serious about spending time with her. You are your own worst enemy.
