Every minute of every day you could celebrate an anniversary of something. Then nothing will be special.

it also inherently makes the other person think you expect them to keep up with this kind of stuff, which, for most, is impossible.

The OP sounds a bit overboard. If some guy said that to me, I'd probably freak out. I think it's okay to say, "Hey, it's been a year since our first date! Glad it's worked out so far." I wouldn't celebrate talking to someone for a week or month. That's a little nuts.
