Then I am shallow. I take care of my physical health. I work out, I stay in shape, I expect anyone I date to do the same. I've meet some great "big girls" in my time, but none of them were a serious love interest. I just can't date big women. Some can not help it due to other health factors, but that isn't my concern.
OP, you like what you like. Attraction and preference cannot always be explained in a logical manner. You admitted to being attracted to this person, and if this is the case don't hide behind "health concerns" as your reason for not pursuing her. You may miss out on the best thing to ever happen to you.
Tell her to stop eating garbage and to burn more calories than she takes in. Losing weight isn't rocket science, and I'm so tired of hearing Americans make a million excuses as to why they can't get their fat asses in gear and instead choose to sit all day and stuff their faces with comfort food. We're a nation of blobs and there's simply no excuse for it whatsoever. None. Zip. Nada.

I was in an LTR with one woman who was fairly large, maybe 250 lbs. Our sex life was as good and varied as any other, and I can assure you this is not an issue. If you're not attracted to them, fine, but this not-really-humorous post was unnecessary.
Generally, I am not, but she's the only "obese" woman, that I am attracted to. She's not grossly obese,(5ft 3 and maybe just over 200, like Melissa McCarthy), but, again, possible future health issues, have me skiddish
