The cheating boyfriend didn't deserve to be stabbed. If a person't feelings towards their S.O. have gotten that bad, realize it early and GET OUT! Pronto!

The slowest torture is far more fun. Let that imagination/creativity kick in and have days, weeks, months and years of fun, if you wish to extend it that far.
Just think of the satisfaction you'd get in letting the air out of his tires some night, even three years later. No need to be there to witness his reaction.
Three years later, he'll think it was the woman he was dating after he stopped dating you, or the next one or next one.
And? He calls the next one, or next one: Did you let the air out of my tires last night?

I think time is better spent moving on with life rather than wasting it in anger over a relationship choice another person made which is not to be with you.
Unfortunately too many people can't see the woods from the trees and when cheated on I'd be thankful almost that I could escape from a person like that rather than continue to hang around them.
