Insest was a commandment that was given by Moses to the people of Israel thousands of years after Adam and Eve. Adam and Eve were only given the one commandment to not eat of the tree of the knowledge of good and evil. They disobeyed this one commandment.
Eve came out of Adam, so by definition Adam procreated with himself. And yes there was insest among the children of Adam and Eve, but this was not a sin at the time.
Even Abraham was married to his half sister.

 Real answer: because that is the only way to defend the bible. But I am sure there will be an obtuse answer related to the propagation of human species etc - which leads back to why not start of with a few Adams and Eves at time zero and avoid your followers to explain such embarrassing incidents.

Christians have a way of twisting incest into something else. Their bible is filled with hokum, and nasty violence. Their god is like a perverted child. He kills one, and not the other even when the offenses are identical. is god a holy schizophrene ?

Too bad your God commanded most of the atrocities in the Bible. He and his servants ordered the genocide of many thousands men woman and children. Your God is as sinful as he claims his creation to be.

In ancient times, men continuing the family line was important. If a man married a woman, but died before she could give him any children, by their laws, the man's brother was obligated to take her as his own wife and give her a child. The resulting child was then considered the dead man's child (the rightful heir) and not the child of the brother who actually helped to conceive it.
That was just their culture back then, and you have to give out the whole story before picking and choosing what you call "incest".

But wait! If we are to believe the Bible he did create more than two didn't he? Otherwise, who was the mystery woman that Cain married and if there were no other people other than Adam, Eve and Cain, why would this god chap put a mark on Cain's forehead so that anyone that came across him wouldn't kill him? Surely Adam and Eve would know who he was. Who else would likely come across him?? There wasn't anyone else around at the time. The plot thickens!!

Jews rarely included the females in a genealogy...Adam and Eve of course had daughters also...Read the First and Second Book of Adam and Eve and the First and Second Book of Enoch...they give a little more detail on the mystery...
