who instruct Christians to use this meat at first? whereas in Jesus time nobody ate pig's meat. Saint Jesus himself ate from sheep's meat a bit often?

Pork is good meat. 2000 years ago they had no cure for pork measles so they were seen as unclean. Pork today is rigorously tested before being released for consumption.

Pigs would be clean animals if they were not bred in squalor.

If you eat pork everyday and shellfish it is not good for you, too rich. Even lean meats like chicken, the skin holds all the fat in by comparison to the meat. Steak is expensive so sheep meat is more common but is also very fatty. Clue is you should not eat the fat.

There is nothing at all unclean or bad about pork...I suppose in the day when your qura'n was written some folks got trichinosis from eating improperly cooked pork and since they did not understand the real cause they blamed it on the pork... Trichinosis: MedlinePlus Medical Encyclopedia

I don't remember where it came from but years ago I heard that pigs, in desert-type or some kind of wrong climate for them, had dry cracked skin that would get infected so they were considered "unclean" to consume.
