With all the comments on here about Jesus not being the Messiah and Jews having the Torah, and that is all they need, if Jesus didn't fulfill the law or the prophecies, why aren't Jews still doing animal sacrifices and burnt offerings then?
If your still waiting on the Messiah to come, all Jews should being doing everything in the Torah still. Along with circumcision was animal sacrifices and burnt offerings that went with Sabbath days, new moon festivals and everything else in the Torah.

Judaism has its own tradition that adapted after the destruction of the temple in 70 CE. I am sure no one is claiming that Judaism is practiced in exactly the same way as it was in the time of Moses. Judaism adapted during the Babylonian captivity, and it adapted again after the Roman conquest and subsequent razing of the temple.
You are approaching the question with a distinctly Christian understanding of the Messiah's role and the purpose of sacrifices. I don't think Judaism regards them in the same redemptive or propitiatory role as Christianity, and they certainly don't believe the Messiah is going to fundamentaly change Jewish practice. If anything, they are looking for the messiah to usher in a return to strict observance, a restoration of the temple, and a resumption of sacrifice, not doing away with it...
Ultimately, they have a very different understanding of who God is, what He wants, who He wants it from, and how it will be accomplished than Christianity. To try to project concepts from one religion onto the other is to do both a disservice.

I am very far from being a spokesman for Judaism, Hopefully a Jewish member will fill in what I leave out or explain better.
All of these practices ended long before the Birth of Jesus(as) and the writing of the NT.
The Jews I know seem to believe that some of the signs of the Messiah will be the rebuilding of the temple and return of the sacrifices.

One thing i have heard is that Christains believe God is neverchanging while Jews don't necessarily think so.
