If you were financially hard up, stressed, or emotionally invested in your work, I could definitely see it happening.

Fairly common, it appears. I didn't have nightmares, but dreamed about my job/coworkers for at least three years. After my son lost his job about the same time I retired (forced), he had the same experience for a couple of years, if not longer. Maybe we're working out old issues - not letting go.

As far as OP's restless nights, I would wake up every morning shaking. This went on for over a year, at least. Being single, I think I was very anchored to that job - my security, so to speak. Loss of that job affected me, clearly. Don't think I've fully let go to this day - and it's been 5-1/2 years. Coworker 20 years my junior - very prominent in the city - died very suddenly of a brain aneurysm ten days ago - found dead in his car with engine running. Brought back tons of memories. I was quite distressed about that death. Very sobering.

Mine was a very large employer with enormous influence in the city and state. I don't think it's all that easy for some of us to just leave an employer of 25-30 years behind.
