I think they are pretty good. It is fun going with a group and sharing the dishes. We always went to the one out in LA when visiting family, now we have one here. We will be going to to the new one at the Providence Place Mall with family when we are home for the holidays. Try it out, you'll love it.
Haven't been to the one a Providence Place but been to others. PF Changs (at least IMO) is more a triumph of marketing and creating a good environment than actually serving good food (much like the Cheesecake Factory). If you want to try the food without the 2.5 hour wait, head over to your local grocery store and pick up one of the frozen branded meals. You can heat it up just like they do.
I've been to one here in Pittsburgh. The food's okay, but nothing overly special. Definitely not worth waiting one hour, let alone two. Then again, I studied abroad in China as an undergrad and that kind of ruined me for Chinese food in the states.

I've been to another one. The food is good and it is beautiful inside....something usually lacking in Asian restaurants. 2.5 hours? No, but it's worth waiting 45 mins or so.
