Looking to buy food; fruits and veggies. Never seems to be any, is there a certain day of the week, time of day or month to go? Everytime we go (weekend morning )its basically vacant!

Weekdays are the best time when all of the vendors are selling including the shops. The weekends tend to be less produce, food and more handcrafts, art, etc. I have tried to buy certain items in the afternoon and they tend to be gone. In the winter when the produce is more limited the place is still active.
The market building was once the place to buy fresh meats, seafood indoors year round until it became more retail oriented. There was also a big grocery store across the street from the market building with many of the same items.

Try Natural Foods store at Grandin Road, Roanoke (Roanoke Natural Foods Co-op)
They have organic fruits, vegetables, etc. - mostly from local farmers.

Maybe you are going a little to early? I am not sure what time they usually get started down there but I don't think it is super early. Have you checked out the farmers market in Salem? While I love the Roanoke Market I think the one in Salem is quite nice too.
